Rooibos properties:
No caffeine
Rooibos is naturally caffeine free. It can be drunk by adults and children alike, without causing the jitters associated with caffeine consumption (increased blood pressure and heart beat, restlessness, or hyperactivity in children). Rooibos has a soothing effect on the central nervous system and can be strongly recommended for people suffering from irritability, headaches, disturbed sleep patterns, insomnia, nervous tension and mild depression.
Low tannin
African Redbush tea has approximately half the amount of tannin found in black tea. Tannins inhibit iron absorption, decrease protein digestibility and are responsible for the bitter taste of black tea. Foods reach in tannin are considered to have low nutritional value.
Nutritious
Every cup of Rooibos tea is a natural source of minerals like calcium, magnesium, potassium, sodium, copper, zinc, manganese and iron plus flavonoids, known antioxidants, as well as phenolic and alpha-hydroxy acids.
Antioxidants and Alpha hydroxy acids
Recent research has shown that Rooibos contains substances similar to superoxide dismutase, an antioxidant compound that is thought to retard the aging process. Three key flavonoids - quercetin, luteolin, and aspalathin - give Rooibos its unique antioxidant properties. A longer brewing time releases more of these beneficial compounds. Alpha hydroxy acids found in the leaves have a soothing effect on irritated skin, which explains Rooibos' use as a cosmetic ingredient.

Origins of Rooibos:
Located in western part of South Africa, north of Cape Town, the Cederberg Mountains with their pristine beauty, rugged cliffs, rushing streams and pure air are home to magnificent rock formations, prehistoric rock art of San tribes and unique Clanwilliam cedar trees.
Aspalathus linearis, a plant called Rooibos by South Africans and Redbush by the English, is a shrub- like bush, with flimsy branches and needle- like leaves growing on the slopes of Cederberg Mountains. Historically, the wild growing plants were chopped with axes; leaves were left in heaps where they fermented to be later dried in the sun. The tasty beverage was the favorite of San people, who used it as a healthy drink and herbal medicine for a variety of ailments.
In 1904 Benjamin Ginsberg , a Russian immigrant with family links to tea industry, recognized the plants potential and began marketing Rooibos to tea connoisseurs.
After the end of apartheid and economic sanctions the tea is steadily gaining recognition in Europe and North America, where it is enjoyed by consumers drinking it as a refreshing hot tea or a cooling ice tea.

Serving instructions:.
Put 1 heaping teaspoon in a fill-your-own tea bag or directly in a cup. Pour 8 oz of boiling water and steep, covered, for 10 minutes. Serve hot or iced, with or without honey, sugar or lemon. Use high quality filtered water.
Chai Nirvana can also be prepared in a traditional way by adding 3 tablespoon Chai to a saucepan plus 1.5 cups water and 1 cup milk. Bring to a boil and simmer for 5 minutes. Add honey or sugar, strain into a cup. Enjoy hot or cold.
